Arròs Amb Baccalà

Once a year, on Divendres Sant (Good Friday), traditional Mallorca eats Arròs amb Baccalà, a Mallorcan paella with lots of vegetables (artichokes, beans, cauliflower, peas, peppers and onions) and a generous helping of Bacalao (Atlantic cod), saffron and rice. The Bacalao used is the dried and salted variety, a speciality in Spain. We had ours at the Monastery of Sant Salvador in Felanitx. The photo was taken near Felanitx, Mallorca, Baleares, Spain.
